Multigrain Pancakes

Ingredients

2 cups wheat groats

1/2 cup corn kernels

1/2 cup quinoa

1/2 cup teff

1/2 cup sorghum

2 tsp flax meal

1 tsp baking powder

1 tsp baking soda

Salt to taste

Almond milk

Directions

Mill first 5 ingredients, add the rest of the dry ingredients and

mix them. Add almond milk slowly to desired consistency.

Groats are a whole grain that retains the germ and bran.

Teff: gluten-free, fine grain about the size of a poppy seed that

grows predominantly in Ethiopia. It has a very mild nutty flavor

and is high in protein, calcium and iron.

Sorghum: gluten free, whole grain naturally high in fiber, iron,

protein, antioxidants, and B vitamins. It can be used to make

molasses.

Quinoa: gluten free, high in protein, fiber, healthy fats, vitamins,

minerals, and antioxidants.
