Baked Apple & Sweet Potato Casserole

 5 medium sweet potatoes, peeled, sliced and cooked.
 2 apples, shredded
 1 cup of raisins
 ½ cup of walnuts (optional)
 3/4 cup of maple syrup
 Cinnamon to taste
 10 oz. bag of Vegan marshmallows (Classic vanilla “Dandies Air Puffed” non GMO).

Wash and peel the sweet potatoes.

Slice the potatoes and cook in boiling water until they are soft.

Drain the water and place a layer of sweet potatoes on the bottom of a baking dish. Spread the shredded apples, raisins and the walnuts evenly on top.

Sprinkle with some cinnamon and drizzle half of the maple syrup on top.

Cover this layer with another layer of sliced sweet potatoes and drizzle the remainder of the maple syrup on top.

Place the marshmallows on top.

Bake at 365’ for 30 minutes. (Or until the marshmallows are slightly brown.)
