Preheat oven to 350’ degrees.
Cut your bread into cubes, and put them on baking sheets on a single layer. Bake in the oven for about 5 to 7 minutes.
In a large skillet, sauté the onions and garlic in a cup of water until translucent and soft. 3-4 min. Add celery, mushrooms, rosemary, parsley, thyme, stirring to blend for two more minutes. Remove from heat.
In a large bowl, combine this mixture with apples, cranberries, butter and bread. Mix evenly.
Drizzle with about one or two cups of water or until thoroughly moist, but not soggy.
Transfer to a baking dish. Bake for 20 – 25 minutes. Enjoy!
