Mango Coconut Chia Pudding

ΒΌ cup chia seed

1 can coconut milk

1 cup water

4-6 cups diced champagne mangos

Honey or maple syrup to taste


In a serving bowl, gently whisk water and chia seeds; let it stand 5-10 minutes, stir every few minutes to separate the chia seeds. Add the coconut milk, gently whisk to mix well, cover the bowl and place it in the refrigerator for 4-8 hours, or overnight.

Remove from the refrigerator, stir in the mango, and add honey or maple syrup to taste.
