Garlic Mashed Potato

Ingredients

4 Large (or 5 medium) Yukon Potatoes

1 tbs. of Earth Balance, vegan butter

1 cup of unsweetened soy milk

2 to 3 cloves of garlic, roasted

½ cup of green onions or minced parsley for garnishing

Salt to taste

Directions

Wash and peel the potatoes and cut them in half.  In a medium saucepan, cook them until tender, about 15 minutes. 

Drain the potatoes, and add the vegan butter.

Squeeze some of the roasted garlic in the potatoes. 

Mash the potatoes with a potato masher or the back of a fork. 

Add the milk, until the potatoes are the desired consistency. 

Salt to taste. 

You may use a mixer to incorporate all the ingredients well together. 

Place the potatoes in a nice serving dish and garnish with green onions or parsley. 

Enjoy!
